A San Diego infectious disease doctor is telling people to steer clear of fresh produce for the next week or so, washed or not, as a fecal parasite outbreak spreads across the U.S. and now reaches California. The illness is cyclosporiasis, and cases are climbing fast.

What is cyclosporiasis

Cyclosporiasis is an intestinal infection caused by the cyclospora cayetanensis parasite, too small to see without a microscope. Illness is caused by consuming food or drink that contains the parasite and usually takes about a week to make a person sick.

Symptoms typically develop about two days to two weeks after exposure, including prolonged watery diarrhea, stomach cramps, nausea, fatigue, loss of appetite and weight loss.

Why washing may not be enough

Cyclospora is a hardy organism with the ability to adhere very well to the surfaces of fresh produce and fruit, according to Dr. Nuwan Gunawardhana of Columbia University Irving Medical Center. It is not really considered contagious from person to person.

Heat can destroy the parasite, making cooked vegetables a lower-risk option than raw produce, with cooking to an internal temperature of 158 degrees Fahrenheit or higher killing cyclospora, according to the Michigan Department of Health and Human Services.
